One of New York State's few salt producers, the company was founded in 2013 by North Fork native Scott Bollman. As a paludier (that's a salt farmer to the rest of us), Scott is a big fish in the world of salt. He gathers seawater from the rich shorelines of Long Island's North Fork, form which the salt is hand-harvested.

Employing a traditional, primal technique, Scott evaporates the seawater using fire, sunshine and the island's open air. The finished product is as beautiful as any treasure from the ocean: the salt flakes are delicate and shiny, and the flavor is briny with an elegant finish.

If you're a chef, you shouldn't stock a lesser product in your kitchen. And if you're a novice cook, this will elevate whatever you're concocting. This is New York agriculture at its most essential, pure and best.
