ABOUT LES COLLINES
In late 2013, maker Brigid Dorsey was inspired by an extraordinary crop of the crabapple tree in sight of her desk, so she picked about 50 pounds of fruit and began cooking. She put the beautiful garnet jelly in adorable Italian jars, a friend-cum-mentor with packaging genius helped create the look, and les collines was born. And the name? les collines means "hills" in French and pays homage to her mother Coline, her time in France, and the beautiful hill country she now calls home
Brigid sources most of her ingredients from small New York State family farms and businesses as well as her own garden. With les collines, Brigid celebrates the beauty of Columbia County, the Hudson Valley and Taconic range of eastern New York. les collines is all about the fruit, and each batch is handmade with love, something she believes you can taste in her jelly & preserves.
